Ingredients for this recipe
- cooked chicken breast – use leftover rotisserie chicken!
- apple – honey crisp is our favorite
- roasted almonds – adds a crunchy texture to the creamy salad
- green onions – brings a sharp peppery taste
- plain Greek yogurt – has a velvety texture and tangy flavor
- mustard – adds a hint of crisp spice to balance the creamy yogurt

Instructions
Start by prepping the ingredients.
First shred the cooked chicken.
Next, chop the apple and roasted almonds and thinly slice the green onions.
Finally, add all of the ingredients to a large bowl along with the Greek yogurt and mustard. Sprinkle with a bit of salt and pepper.

For about 8 years I have been using yogurt, as is or drained depending on the recipe. But the idea of using avocado is simply blowing my brain like a Santa Anna wind hitting a paper kite. Wow. It almost makes a person like me wonder why that never occurred to me. I use it in other sandwiches, and tacos, burritos, flautas, etc. Thanks to your recipe, and the avocado spread concept, my future’s so bright I have to wear shades.

Just tried this and it’s great. I doubled the Greek yogurt though because 1 tablespoon of mustard was a bit overpowering for me.
